—Put 2 cups mesclun greens in a bowl
—Add 1/2 cup artichoke hearts and 15 roasted pistachios, and any other yummy veggies that you like
—Drizzle with 1 1/2 tablespoons raspberry vinaigrette (or olive oil for an extra healthy-fat boost!)
